Use sodium metabisulfite to disinfect fruit before fermentation or preserve wine after fermentation.

Be careful when using sodium metabisulfite because the concentration of sulfur dioxide in wine can easily become overwhelming.

For a more manageable winemaking additive, try Osorno's Sulfite Solution.
